Zaachila's Bakery started with a simple conviction: the best bread takes time, and the best café feels like home. We opened our doors on Main Street in Poughkeepsie with a wood-fired oven, a small menu, and a big commitment to doing things the long way.
Every loaf is mixed by hand, every croissant is folded at least twenty-seven times, and every cup of coffee is pulled to order. We source locally whenever we can — butter from Dutchess County creameries, eggs from nearby farms — because flavor starts with ingredients you can trust.
We buy the best flour, butter, eggs, and fruit we can find — preferably from farms within an hour's drive.
Dough is mixed by hand and given the time it needs. No shortcuts, no accelerants — just flour, water, salt, and patience.
